A Sardinian speciality, the tuna loin is lightly salted and wind dried. The strongly flavoured, thin slices are traditionally eaten with a drizzle of olive oil, fresh tomatoes and capers. They are also lovely finely slithered and mixed into cooked green beans in a garlic and tomato sauce. Archived Updates
