Martelli cooked hams are produced in the province of Padua,
Italy, in a facility equipped with cutting edge technology. Here fresh whole
legs of pork are first salted in brine and prepared only with natural aromas
then slowly massaged at length to allow the flavours to penetrate. Then hams
are then placed in a vacuum pack, inserted into a mould and cooked in steam
ovens for over 24 hours. The cooking process is very slow so that the meat
retains all its organoleptic properties. The cooling process, on the other
hand, is very quick to keep the product sterile. Finally the hams are packed
and pasteurized again in a sterile environment. The pork meat used for the
Martelli prosciutto cotto all come from selected pig farms in Italy that feed
their stock only natural ingredients like barley and whey that comes from the
nearby Parmigiano Reggiano DOP and Grana Padano DOP production farms or from
selected breeders in Northern Europe. The Martelli Prosciutto cotto is gluten
free, lactose free, soy free, starch free, polyphosphate free and contains no
GMO.
