Extra Virgin Monti Iblea DOP: Combination Monti Iblei DOP is obtained from the Tonda Iblea and Moresca culitvars and is harvested in September and October. This medium fruity olive oil with hints of ripe tomato has a slightly spicy sweet flavor. The balanced flavor makes it ideal for salads, fish and uncooked legumes. Extraction Method The olives are hand-picked during the ripening stage when the olives are still not fully mature and the oil extraction is run cold through a 2 phase continuous cycle on the same day. This results in a lower yet higher quality yield.
