For too long those with celiac disease have had to endure gluten free pastas, whose consistency and flavor are nowhere close to the real thing. Well to us, not being able to enjoy a big plate of authentic Italian pasta is a genuine tragedy, so after sampling many products, we found La Rosa. Made with a blend of rice and corn flour, La Rosa's gluten free pastas are made in full compliance with the rules of classical Italian tradition. After cooking, they remain consistent, firm and elastic -- you can hardly tell them apart from a traditional semolina flour pasta. It's the first gluten free pasta that we've seen that comes in nests ("nidi"), which is a sign of a truly gourmet, artisanal pasta.
